In this exceptional setting, the chef of our gastronomic restaurant, Yohei Hosaka, crafts a refined and precise cuisine—an invitation to a true journey of the senses.


His cooking stands out for perfectly judged cooking times, the quality of carefully selected ingredients, and a clean, minimalist presentation that lets flavours, textures, and seasoning pairings fully shine. 

Each dish reflects a constant search for balance, finesse, and depth.


Wine also plays an essential role here. Charly, Head Sommelier, curates a demanding and vibrant wine list spanning France’s great wine regions. Characterful wines, winemakers’ cuvées, and prestigious bottles come together with the same high standards, in a spirit of discovery and sharing.

Grounded in the fundamentals of French cuisine and enriched with subtle Japanese influences, the chef’s cooking stands out for the precision of his technique, perfectly controlled cooking, and balanced flavours. Every day, he creates refined and sincere gastronomy, inspired by the terroir and the landscapes of Haute-Savoie.

except in July and August.

The Kitchen Garden of L’Abbaye de Talloires

A legacy of the monks, the Abbey’s kitchen garden still retains its original monastic layout, carefully preserved. While vegetable crops are no longer grown here, the spirit of the place lives on through a garden of herbs and plants selected with exacting standards.


Aromatic herbs, edible flowers, and botanical plants are cultivated with care, in line with the seasons and the kitchen’s needs. Developed in close collaboration with the chef, this selection is subtly planted to encourage harmonious growth and optimal aromatic quality. 

The garden’s harvest thus enriches the chef’s culinary creations, as well as those of the bar manager, in an ongoing dialogue between nature and gastronomy.


Among the varieties grown are common rue, Agastache rugosa, coriander, red amaranth, borage, Cherry Caramel phlox, calendula, Oxalis ‘Iron Cross’, tansy, and fennel, among others.
The garden paths invite a gentle stroll and reflect the close bond between heritage, plant life, and the art of hospitality at L’Abbaye de Talloires.

Maître Restaurateur

The Maître Restaurateur title is an official distinction created by the French State to identify and promote professionals in traditional dining whose expertise is recognised and who commit to working with raw ingredients—mostly fresh—and preparing them on site. Established in 2007, this title is now the only quality certification awarded by the State in the restaurant sector. It recognises craftsmanship, high standards, and best practices within establishments engaged in a long-term quality approach.


Awarded for a period of four years by the Prefect of the department, the Maître Restaurateur title has just been renewed for the second time for the gourmet restaurant of L’Abbaye de Talloires, reflecting the consistency of its commitment to excellence.

The label has a twofold objective :

  • to recognise excellence among traditional restaurant professionals,
  • to highlight their expertise and their commitment to authentic, high-quality cuisine.

The Maître Restaurateur distinction therefore guarantees cuisine prepared on site from high-quality raw ingredients, by a team of qualified professionals.

The assessment is based on several key criteria, including :

  • the quality and origin of the products served,
  • customer relations and the quality of the welcome,
  • interior fittings and layout,
  • the surroundings and outdoor areas where applicable,
  • hygiene, safety, and cleanliness.

The title also requires a varied culinary offering, with at least four starters, four main courses, and four desserts, as well as regularly renewed suggestions to ensure freshness and seasonality.
